El Conquistador Restaurant
About This Spot
Stepping into El Conquistador Restaurant in Hillsboro feels like entering a steadfast local treasure—a place where warmth blends effortlessly with the vibrant pulse of authentic Mexican flavors. The moment you arrive, the hum of easy conversation and the inviting scent of freshly prepared dishes set a comfortable, unhurried rhythm. It’s not a rushed, flashy dining spot, but rather a familiar neighborhood gathering space where hands reach for chips and salsa with genuine appreciation and where the clink of a well-crafted margarita glass signals shared good times.
The atmosphere here strikes a balance between lively and relaxed. Whether you’re settling in for a solo meal or gathering with friends and family, the space feels welcoming without fuss. The staff moves with attentive care, ensuring the pace of your experience allows you to savor each bite — from the tender fajitas that come sizzling straight to the table to the nuanced spice of a fresh salsa that invites just the right amount of heat. It’s clear that this is a place where food is about comfort, connection, and time well spent.
The menu at El Conquistador offers more than a taste of Mexico; it serves as a backdrop for shared moments. Imagine starting with a basket of warm chips paired with mild salsa incorporating just a hint of raw jalapeño, gently teasing the palate without overwhelming it. There’s something deeply satisfying about a plate of mixed fajitas—where chicken and beef come infused with the subtle earthiness of peppers — or the welcoming embrace of a classic tortilla soup on a cooler day. And beyond the food, the bar brings life with house margaritas and sangria that aren’t just drinks—they’re companions for laughter and lingering conversation.
El Conquistador’s character is further shaped by the genuine appreciation of those who return regularly, some even traveling from afar. Visitors find themselves drawn here not only for the honest flavors and balanced pricing but also for the attentiveness of a team that feels like an extension of the community. The seating flows easily even during busy moments, reflecting a space that knows how to move in harmony with its guests’ needs.
In a small Texas town where local charm meets Mexican culinary heritage, El Conquistador stands as a quietly confident bridge between tradition and daily comfort. It’s less about flashy presentation and more about creating a setting where food nourishes connection, and each visit feels like coming home.

Great place! The House Margaritas are worth getting. Steaming hot fajitas! (See picture). Plenty of parking in the back (I don't recommend Semi-trucks, your best bet is to park somewhere else and walk here.) This is one of the better Mexican Restaurants in this area! I usually have to order the sour-cream, but it came along with the fajitas. The chicken and beef tasted like bell peppers; you might want to add a little salt! I'll be back! $34 for Fajitas for one and 2 Margaritas and a fresh jalapeno pepper uncut and raw! Most seats are wooden chairs. They have a couple of booths. Sign on door says "We are short staffed, some members of staff didn't show up today." The whole place is super clean. Restrooms are super clean. Two bus boys waiting for tables to clear and will immediately clean the tables when customers leave. I got there Monday around 6pm and the parking lot was a quarter full.

We live in Fort Worth and drive down there just for dinner from time to time. That's how much we like it. The food is excellent and not overpriced like some places are. Also, we've always had excellent service from the staff. Well worth the drive in our opinion and will definitely keep coming back!

While traveling we stopped for lunch. The parking lot was full. Service, staff & food were all outstanding. Got seated right away. The Shredded Chicken meat on my Taco Salad was so flavorful!! I liked that the lettuce was Romaine instead of iceberg. The fried tortilla shell was light & crispy too. I also liked the fresh spicy Salsa. A little heat but not too much. The restaurant & restrooms were very clean. Wish I lived closer!!

Staying here in hilsboro and I been wanting to come here for weeks glad I made that decision today . I'm from San Antonio and know a little about Mexican food and this place is good . The service is fast and good . Had the half order nachos to start and the appetizer was brought out almost instantly. The food arrived shortly after I ordered the tres enchilada combo plate and food was good and hot . A perfect compliment to the ice cold margarita I enjoyed. Could've been a Lil stronger but worked well enough . I'll definitely be back . Definitely recommend

Fantastic all around. Everything was amazing. Spectacular service that went above and beyond doing extra things we didn’t even ask for. Chips and salsa on point! Fairly priced. Great margaritas. Can’t say enough. Totally hit the spot. I need the salsa recipe!!

Would I ever think I would be one of those people that says yes to a good billboard- no. Has it been YEARS of passing this billboard & judging it- yes. Sadly. Yet being on holiday this week; it’s been a lot of YES! let’s try it. And boy… am I thankful I did. These potato nachos are epic!! 10 out of 10. The quac- it’s like your grandma’s guac… if she ever made it. Service was incredible. Food spectacular. Almost celestial. But; whom can ever see potato in another way??
